Sweet treats for Summer : MUG CAKE

December is the month of sweet treats and summer holidays. Parents have to be on top of their game to keep the kids entertained and well fed. Here are two recipes to add to your game plan.

A mug cake that even your kids or husband can make.
Dates and nuts power ball / Ladoo to keep you going when you need that extra dose of energy. And they are a healthy alternative for your kids too (don’t tell them it is healthy!)

MUG CAKE

This cake is as quick as they come. Get the kids to make this one it is easy and only involves one tea cup and a fork to mix them up. There are so many variations you can do with this recipe. I have listed a few.

INGREDIENTS

All-purpose flour / Self-raising flour – 3 tbsp
Unsweetened Cocoa powder – 1.5 tbsp
Sugar – 3 tbsp (use less if you like lesser sugar)
Baking Soda – 1/8 tsp (use only a pinch if you are using self-raising flour)
Salt – a pinch
Oil – 2 tbsp
Milk / water – 3 tbsp

METHOD

Mix all dry ingredients in a microwave safe mug with a fork.

Now add the wet ingredients and mix thoroughly until it is a smooth and running liquid.

Place mug in microwave and set on full power for 2 minutes (mine is 1100 w microwave) after the timer has gone off, let cake sit in microwave for 30 seconds.

Serve plain or dusted with icing sugar / cocoa or with vanilla ice cream or whipped cream or sprinkles or fruits or your choice of topping!!!

VARIATIONS
Drop a dollop of cold or frozen Nutella / peanut butter / a lindor chocolate in the dough before you microwave to get a nice gooey center when you dig in.
Sprinkle some chocolate chips before you microwave to have a chocolate chip cake
For a plain vanilla cake just drop the cocoa powder and add a half tsp of vanilla essence and 2 tbsp of milk / water
For a strawberry cake just add one chopped strawberry and add a half tsp of strawberry essence and 2 tbsp of milk / water
Add half a spoon of instant coffee to make a mocha cake.
